Tatsuya is a 76-year-old sushi restaurant just a five-minute walk from Beppu Station.

Third-generation owner Mr. Kamisaka tells me it all starts with his grandfather, a former head chef from a renowned local ryotei.

The entrance to the relocated shop has an air of exclusivity that makes me feel like a first-timer might be turned away. However, Mr. Kamisaka greets me with a gentle smile, assuring me that as long as a room is available, anyone is welcome.

I am shown to a spacious private room where a multi-course kaiseki dinner begins.

Each dish is meticulously prepared with heartfelt care.

The meal builds toward a perfect peak with the final sushi course.

I learn that the owner personally scouts multiple local markets for the best produce before starting his prep work, a process that keeps him working well past midnight every day.
